Our Practices

White Clover Farm beef is pasture-raised using the intensive rotational grazing method. The beef is certified Animal Welfare Approved by an annual audit. All  feed is produced exclusively from the farm’s pastures. No growth hormones or antibiotics are used. Chemicals and pesticides of any kind are NEVER used on our pastures. The herd of Belted Galloway/Angus cattle enjoy fresh air, sunshine, lush green grass, fresh water, a stress-free life and stunning views of Vermont’s northern Taconic Range. Content and happy cattle make for delicious and healthful meat.

Price Information

  • A Half (side) $ 5.00 per lb of hanging weight. The price includes USDA processing at an animal welfare approved facility in Eagle Bridge NY, dry aging and vacuum packaging.

WHAT’S A SPLIT HALF MEAN?

Our Quarters of Beef are done as “split-halves” or “mixed quarter” which is quarter of beef (1/4) made up of a variety of cuts from the hind and fore quarter of the animal. This results in approximately 80-100 lbs of meat, depending on the size of the animal.

WHAT DO YOU GET IN A SPLIT HALF?

A Quarter or Split Half of Beef Includes: Ground Beef, Steaks such as Ribeyes, Filet Mignons, Flat Irons, New York Strips, Sirloins and London Broils, Pot Roasts, Roasts, Shanks and Stew Meat.

IS THE MEAT USDA APPROVED?

Yes it is.  White Clover’s processing is done at an Animal Welfare Approved/ USDA facility. The meat is dry aged, the old-fashioned way, for the best in tenderness and flash frozen to ensure superior quality.
